Honey
After harvesting the ripe cherries, the skin is removed and the bean ferments in water to eliminate any remaining pulp. It is then thoroughly washed and sun-dried. This process prioritizes the cleanliness of the bean, resulting in clear cups with bright acidity and well-defined flavors.
The coffee is dried with the entire cherry, without removing the skin or pulp. During drying, the bean remains in contact with the fruit, absorbing sugars and developing a more intense fermentation. This results in coffees with greater sweetness, more body, and fruity and expressive profiles.
In anaerobic variations, fermentation is carried out in closed tanks without oxygen before drying, enhancing more complex and sometimes more exotic profiles.
The cherry skin is removed, but some of the mucilage (the sweet layer surrounding the bean) is left on. The coffee is dried with that layer still present, creating an intermediate point between washed and natural. The result is usually a balanced cup, with good sweetness, medium body, and rounder acidity.
